Not sure what trophies you can unlock but game was cleared on Normal with all characters at level 50 and lots of maxed materia. 3/18 chapters are cleared on hard and none of the hard-mode Shinra Simulator challenges have been completed.

I did 100% all side-quests, yes. Not sure if you can unlock it again if you do another playthrough with Chapter Select though even though it allows you to do them over again. There are some saves in there that don't have 100% of them done though.
