Just a quick update, Rockstar has just tweeted out that Red Dead Redemption 2 will have over 200 species of animals, birds and fish According to the tweet each animal behaves in their environment differently than others or ("in a unique way") says Rockstar. Which means we should see realistic behavior from the animals like we do in real life. There will be Hunting &Fishing which are key for survival in the game.

The game will have numerous predators which you will have to be on the lookout for. Such as Bears, Wolfs, Coyotes, Eagles, The Venomous Gila & many more! As said from Rockstar
"The wilderness is at once a bountiful and perilous place, for both man and beast, and any predator can quickly turn prey."
