It probably seems silly, but I'd love to see some of my childhood games from PS2 remastered like "My Street" to bring back some pretty cool local multiplayer activities (if you aren't sure what My Street is, you should definitely give it a quick Google). Another one I'd love to see remastered is Yu-Gi-Oh! The Duelists of the Roses. That was one of my favorite games growing up.

I would like to see the resident evil Outbreak series to be remastered with new servers for current gen consoles.
