I don't know if it's the quickest but all the Telltale Games (minus Wolf Among Us) are basically finish the game to reach the Platinum.

There is also a game called Mayo that you just need to spam X 10.000 times to platinum it.

Goosebumps:The Game was also super easy.

MNiM, Energy Cycle, and Goosebumps were bought solely for easy, quick plats.
Day of the Tentacle and Odin Sphere: Leifthrasir were the easiest plats from games I bought because I actually wanted to play them.

Easily any of the telltale games or life is strange.
Walking dead season 1 & 3 plus batman were definitely easy.

You could also go for the "cheap" platinums like MR massagy, Energy cycle or 1000 Top rated trophies.
