Well you should be able to stop the download or delete game update data, yes?

just delete the game data then you will have to reinstall it, then dont update it.

I dont think its possible to download a game without the latest patch. Ever since I got my PS4, I bought all my games off the PS Store. It always downloaded the entire game without updating and it always let me play online and stuff. So I think the only way to avoid a certain patch/update, is to stop it in your downloads and dont install it.
