I have no idea what trophies it wil give you guys, this needs testing.
I would recommend trying out some things to make the thropies pop, something like collecting 1 collectable to see if the trophy pops.

Yeah those are the trophies which concern me a lot more than Arcade... Have you figured if they can be unlocked with this save?
Regardless of the answer (which I do not know) I would not let the fishing/hunting in FC5 concern you. Not very grindy compared to if any other game did a system like that. No animals or fish are difficult to get that I remember, and there are places to get them rather than just searching aimlessly in some general zone.
