Here is my Platinum Save for God of War 2018.
Save Slot 1 is the Platinum Save.
Save Slot 2 is Saved right before the final Valkyrie (Chooser of the Slain)
Save slots 3-10 are saved right before story based trophies. I believe you can get all story trophies except the first 4.
(For the saves above, I'm only Counting the manual saves, not autosaves)
Let me know what other trophies you can get from these saves.

Which save are you using? You're doing more than loading the game I presume. You would still need to pop the individual trophies.
Taking a quick glance at these, it looks like saves 2 through 10 are designed to pop trophies. You would still need to beat bosses, interact with something, do whatever story or progress things are necessary to pop the trophies though.
Save 1 is designed for people to mess around with or for progress reasons, but since the platinum was already achieved on that save a lot of trophies would be locked out (unless maybe getting them again in new game plus, if I recall they added that mode).
If you give me more details on what save you're using and what you're doing both on PC and PS4 I can try to see what's going wrong.
