if the progress is already complete the trophies are not unlocked, so for example you have to leave 1 challenge to complete for the character and the A or B Speedstar to complete to get the trophies.

Sorry to bump this old thread, but I'm looking for this too. Especially the Speedstar course B and C because they're hard as hell. Someone posted a save with all three courses unlocked, I tried that one and finished course A but yeah, unfortunately it didn't unlock the trophy.
