I've seen tons of youtube videos that I think are legit but, I don't know if it'll break my ps3 or what.

You can jailbreak a system over 3.55 but it required flashing you NOR/NAND Chip. This can be done using an E3 Flasher tool that cost a bit of money. There are multiple people that offer downgrade services just got to use Google and you should find someone if interested in doing that. Hope this helps bro!
